Asian Cucumbers
Posted: September 18, 2018 Filed under: Uncategorized Leave a commentMaking an asian slaw with chicken for Mah Jongg Lunch tomorrow. To spice it up I am adding these cucumbers to the mix. They will marinate overnight so might be a little pickled by lunch.
1 English cucumber sliced as thinly as you can
1/3 c. Rice wine vinegar
2 T. Soy sauce
1 T. Lime juice
1 garlic clove, minced
1/2 inch of ginger, grated
2 T. Sugar
1/2 t. Sesame oil
Ground black pepper
Red pepper flakes
Mix everything together except the cucumber and them pour it over the cucumber in as small a container as will hold it all. Mix well, cove and refrigerate for at least 30 minutes to over night.
