Perfect Beaufort

Since it is a short two day Strategy class I came down early to stay with my Friend A. in Beaufort. Of all the places on the coast of North Carolina Beaufort is my favorite. Sorry AB.

My Hostess A. Does not appear on the Internet, but does show up big time as a friend. Tonight she invited two other friends, Charlotte and Elizabeth Townsend to come have dinner with us. Elizabeth and her husband Doug used to live down the street from me in Durham so it is always great to catch up. Doug wasn’t invited for dinner but he came by to see me just the same, which was a treat for me. Christine brought a bag of books so I have plenty to read in Maine.
Annette designed a fabulous menu and I got to teach her how to chop different vegetables. We had a most YUMMY salad I want to memorialize here because I want to make it in Maine.
It was thinly slicked raw zucchini, thinly sliced fennel, arugula, peas, mint, feta and champagne vinaigrette. It was fabulous, but would also be good with Ricotta salta or pecorino. A. had made some perfect shrimp with cocktail sauce and we had a crab cake as well. What a dinner. Between the food and the company everything was perfect. Just like Beaufort.
